When you search vegan recipes, So many have rice or starches like pasta. But if you want to reduce the pasta and rice in your diet where do you turn! I found this no noodle recipe on the interweb and decided to try my own twist as I always do.
Ingredients
- 7 Carrots
- 2 green onions
- 2 cup of mung beans
- 1 small red pepper
- 1 small green pepper
- 1 cup of chopped kale
Sauce:
- 2 tbsps peanut butter
- 2 tbsps soy sauce
- 2 tbsps honey
- 1 tsp red pepper flakes
- 3 tsps lime juice
Instructions
- Wash and skin and cut tops of carrots.
- Spiralize the carrots into noodles.
- Chop onions and green peppers
- Saute all vegetables in a large pan on medium heat and cover
- While cooking make sauce. Add a little bit of soy sauce at a time to peanut butter to make it easier to mix. Mix all ingredients together.
- Once vegies are at desired texture pour sauce over vegeies and mix well. Turn off heat and enjoy!
