I love banana bread! It is one of my signature baking treats that everyone loves. I use the same recipe to make muffins. I normally make it with eggs and butter but wanted to give it a try the vegan way! To my surprise it came out great! My non vegan friends and husband loved it!
Tips on getting the perfect texture:
Don’t over mix your batter! Overmixing will cause gluten to be activated from the flour and make the bread dense and gummy. Yuck! So when its time to add the flour, Fold! Fold! Fold! Do not stir and over mix. Fold in the flour until blended and your yummy treat will be light and airy and delicious!
Ingredients
- 2 ripe bananas
- 1 tsp vanilla
- ¼ cup of oil ( I used vegetable)
- 1 cup of brown sugar
- 1 flax egg ( 1 tsp flax meal and 3 tbsps of water)
- 1 tsp baking soda
- 2 tsps cinamon
- 1 ½ cup of all purpose flour
Instructions
- Preheat oven to 350 degrees
- Mash bananas in a large bowl.
- Add oil, sugar and mix well.
- Add flax egg and vanilla and mix well.
- In another bowl mix together dry ingredients ( flour, baking soda, cinnamon)
- Fold flour mixture into wet ingredients.
- Pour into a muffin tin. Should make 8 muffins.
- Bake for 30 to 40 mins . Test with a tooth pick for completed baking. Let it cool! Hardest part. It may be still too warm and mushy if not. But I promise once its cool its so good!
