Vegan pancakes are easy and tasty!
Prior to being plant based, I was in love with pancakes! Anytime I would go to IHOP or any diner, I always got the pancakes. Nothing else! I made them at home for my family. My husband thinks I have the best pancake recipe in the world!
Then I went plant based. How could I give up my beloved breakfast go to. I saw a recipe on youtube on vegan pancakes and decided to try it out. My first time making it are these pictures below! They came out great! Even my meat eating husband thinks so. Even though he still prefers the regular ones!
Some new to plant based tips:
Flax egg: If you don’t know what flax egg is, you’re about to! Its an essential in plant based cooking. It is comprised of flax seed meal and water. I mix 1 tablespoon of flax meal with 3 table spoons of water and let it sit for 2 minutes to get the consistency of an egg. I use this in many recipes when I need things to come together and hold.
Reducing sugar: Since I am also eating more whole foods, I tend to reduce the sugar in my recipes or switch it out with honey or maple syrup. You are free to turn things up if you like it really sweet.
Recipe
Ingredients
- 1 ¼ cup of all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- Pinch of salt
- 1 tsp vanilla
- 2table spoons of cane sugar or honey or maple syrup
- 1 Flax egg (see above)
- 1 cup of plant based milk ( I use almond milk)
- 2 table spoons of oil (canola, vegetable)
- ¼ cup of blue berries or any fruit to top pancake
Instructions
- In a bowl mix all dry ingredients (flour to salt)
- in another bowl make your flax egg. Then add honey, vanilla and mix.
- pour flax mixture into dry ingredient and mix slightly
- then add milk slowly at a time while mixing until its pancake consistency ( not to runny, not to dry)
- Pour the oil into frying pan
- heat frying pan on medium heat
- pour out 1/3 cup of pancake mixture into frying pan. Flip when you see bubbles form on top
- place each pancake stacked on top of each other. Top with blueberries and serve with maple syrup poured on top!
