I was put to the challenge of plating my meals half green vegies and half starch. I been reading that this is a great way for weight loss and portion control. If you are looking to do either try this! And here is one recipe to get you started!
Ingredients
- 1 bunch of kale
- 1 sweet potato
- 1 tomato
- 1 onion
- 2tsp salt
- 2tsp black pepper
- 2 tsps garlic powder
- 1 tbsp oil
Sauce:
- 1 tbsps Mustard
- 1 tbsp Maple syrup
- 1 tsbp Tahini
- 1 tbsp Almond milk
Instructions
- Cube sweet potato into 1 inch cubes.
- Chop kale, tomatoes and onions
- In a medium saucepan on medium heat saute tomatoes and onions in 1 table spoon of oil for 5 mins until translucent. Season with salt.
- Add kale and sweet potato with spices to sauce pan and cover x 20 mins
- While sweet potato is cooking, make the sauce. Mix together all the sauce ingredients in a small bowl. Add more milk as needed for desired consistency.
- Once sweet potato is cooked through turn off heat. Serve with sauce!
