I was quite lazy with this meal. I frequently like to make meals with indgredients I already have in my house. So this time, I had sweet potato and brussel sprouts. I tried to google what I could make with these two ingredients and not much came up besides just roasting them on a sheet pan. And that’s the one thing I wasn’t in the mood for. So This recipe was birthed out of trial and hunger haha!
Ingredients
- 1 large sweet potato
- 1 bag of trader joes frozen brussel sprouts
- 1/2 cup Italian bread crumbs use half for mixing and half for topping
- 2 tsps. Nutritional yeast
- 2 tsps. turmeric
- 1 tsp salt
- 2 table spoons honey
- 1 tablespoon olive oil
- 1/2 cup Almond milk
- Pre heat oven to 400 degrees
- wash peel and cube sweet potato
- microwave bag of brussel sprouts as said on back of package
- slice brussel spouts in half
- Mix sweet potato together with all other ingredients
- pour mixture into baking dish and top with bread crumbs
- Bake for 45 mins.
- Test doneness of potato with knife.
- Serve and enjoy!
